MaD Stuffed and Bronzed Pork Chops

Stuffed pork chops
Rhonda said this was one of the best meals I have ever cooked.
Country bumpkin samurai style
serves 2
Pork chops center cut boneless
4 chops
MaD White
MaD Orange
Brown sugar
Olive oil
2 Sweet potatoes
1/4 cup Sun-dried tomatoes sliced
1 clove Garlic minced
1/2 cup Spinach
3oz Goat cheese
1.5 cup Heavy cream
Block of Parmesan Cheese
Rest of spinach bag for a vegetable
Preheat oven to 400
Make bronzing mix (equal parts)
2 tbs mad scream/orange
2 tbs brown sugar
2 tbs olive oil
Coat chops and let marinate while prepping about 30 min
Cut sweet potatoes into 1/4” slices
Toss in mad white mad orange and olive oil
Bake on a parchment lined baking sheet for 30 min
Sear chops about 4 min each side
Remove from pan
Add tbsp olive oil to pan and add garlic and tomatoes
Sauté until fragrant
Add 1/2 cup spinach and let wilt
Season with mad white (season while you go)
Remove from pan to mixing bowl
Add goat cheese and mix just until it comes together.
Lower heat on sauté pan
Add heavy cream
Add 1 tsp mad white and 1 tsp mad orange
Reduce while stirring
When thickened grate Parmesan cheese into sauce.
While sauce is cooking assemble the chops

Stuffing
Chop
Roast in oven for 8 minutes
Sauté some spinach and serve it
Tall and proud 90’s style.

Then the chops
Then the sauce
Then the spinach
Then grated cheese.
